New Mexican Restaurant, Jorge's Cantina, to Open in Waco, TX
Kyle Citrano, managing partner of George's Restaurant, Bar and Catering, is teaming up with his father, Sammy Citrano, to open a new Mexican restaurant called Jorge's Cantina. The restaurant, located at 4225 Franklin Ave. in Waco, Texas, will serve regional Mexican cuisine, including coastal, traditional, and Tex-Mex dishes.
Renovations are well underway at the former El Paso Mexican Grill location, with exterior stucco and painting in progress and interior drywalling set to begin soon. Equipment and furniture have been arriving, and the project is moving along at a good pace, thanks to local contractors like Barsh Construction Co., Bowen Electric, P&E Mechanical, and Mike Staas Services.
While Jorge's Cantina will offer staples like queso, guacamole, and chips and salsa, Citrano emphasizes that the restaurant will bring a unique experience and flavor to customers through carefully selected ingredients and preparation methods. Standout dishes will include Al Pastor Brussel Sprouts, Roasted Poblano and Lump Crab Dip, Chimichurri and Roasted Corn Basmati Rice, and a Carnitas Spiced Double Pork Chop.
The bar at Jorge's Cantina will also feature innovative offerings, such as Nitrogen Draft Margaritas, Fluffy Pineapples, and Avocado Frozen Margaritas, served in playful glassware with cool presentations. Sean McGuire, a restaurant industry veteran with 30 years of experience in Texas and Kansas City, has been hired as the managing partner for the new establishment.
